Pumpkin Bread 1 3/4 c. flour ½ c. oil 1/4 tsp. baking powder 1 c. pumpkin 1 tsp. baking soda 1/3 c. water 1 ½ c. sugar 2 eggs ½ tsp. salt ½ tsp. cloves ½ tsp. nutmeg 1 tsp. cinnamon ½ c. raisins 1. Preheat oven to 350.
2. Grease a 9 x 5 x 3 inch loaf pan. Set aside.
3. Sift flour, sugar, baking powder, baking soda, salt, cloves, nutmeg and cinnamon in a large bowl.
4. Add raisins. Mix until raisins are coated with flour mixture.
5. Beat eggs. Add oil, pumpkin and water. Blend well.
6. Add egg mixture to dry ingredients. Mix just to moisten.
7. Pour into prepared pan. Spread evenly.
8. Bake for one hour or until a toothpick, when inserted into the bread, comes out clean. |
